Lucious, Light and Heavenly Baked Blueberry Pancakes!
I so love Blueberry Pancakes! I really do! What I really don’t like is standing at the stove flipping them one at a time until I’ve got a stack of pancakes to eat! It’s so time consuming! That’s why for a lot of years, I didn’t make pancakes. I only ate them when we went out for breakfast. Really, who has time to just stand in front of the stove flipping one pancake after another until there’s enough for everyone! Not me! Maybe it’s my A.D.D., but I gotta see some serious results pronto before I spend my time on something! I’ve had a good basic recipe for pancakes for many years. I got it from my mother-in-law Eula Mae when I was a newly wed some 44 years ago. She had tons of wonderful recipes. I wish I was into cooking back then. Or had the presence of mind to have gotten her delicious recipes written down. Alas, I was so young back then and didn’t see the need or perceive that one day I would treasure having them. I made pancakes using her recipe until I quit making pancakes! LOL! Back then, I had three kiddos to raise, a job and a very active life. The pancake recipe got stuck in a binder with 1000’s of other recipes. I just didn’t have time to flip pancakes! Fast forward: Kids are grown, I am now an ardent cook and baker, we bought a house where we planted eight Blueberry Bushes. I began searching for all kinds of recipes to make with Blueberries. Whether picked fresh or frozen, we eat Blueberries year round. Just imagine how many Blueberry recipes I’ve collected over the last 15 years? I still collect Blueberry recipes. Just recently one follower of Candied Living requested on behalf of her lovely daughter a Blueberry Pancake recipe. Melanie… this one’s for you and your sweet daughter.
I had to search for my basic pancake recipe that was long ago put in a binder and placed ??? who knew where??? Once I found it, I (of course) had to redesign the recipe because I still do not want to flip pancakes one at a time. I thought, “If only I could just bake a pan of pancakes.” Plus, with the Holidays fast approaching, our home will host family and friends from Thanksgiving thru New Year’s. I’ll be making a lot of breakfasts. With over 40 pounds of Blueberries in the freezer I could make a ton of pancakes. It was decided! I will come up with a recipe to bake blueberry pancakes.
Actually, it was easy. I just replaced the all purpose flour with cake flour, something I do a lot, and added a tad more baking powder plus one cup frozen blueberries to the original basic pancake recipe from my DMIL and viola’ my Baked Blueberry Pancake was born.
The ingredients: Milk, blueberries, baking powder, salt, sugar, cake flour, oil and eggs. You can mix this up in less than three minutes. Then pour into a heated 1/4 sheet pan and back in the oven for 20-25 minutes. Mine took 22 minutes. It will depend on your oven.
Top batter with fresh or frozen blueberries
The result? A light and fluffy pancake you didn’t stand at the stove flipping! BTW, these freeze really well too! Just cut into squares, put in a freezer bag and place in the freezer. I tried toasting them in my toaster and it worked great!
- 1 cup cake flour
- 1½ teaspoon baking powder
- 3 heaping Tablespoons granulated sugar
- ½ teaspoon salt
- ¾ cup milk
- 2 eggs
- 4 Tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 cup blueberries, fresh or frozen
- Preheat oven to 375 degrees
- Pour 1 Tablespoon oil into quarter sheet baking pan or oven safe dish and place in the oven while it's preheating
- In a medium bowl whisk together cake flour, baking powder, sugar and salt. Set aside
- Beat together milk, eggs, remaining 3 Tablespoons oil and vanilla
- Add dry ingredients to wet ingredients and whisk until just blended
- Pour batter into preheated sheet pan or baking dish
- Add blueberries to the top of the batter and immediately return to oven
- Bake for 20-25 minutes until a toothpick comes out clean
- Serve immediately with butter and warm Blueberry preserves
